Inside Chef Charbel Hayek’s New Coastal Mediterranean Hotspot in San Clemente

TELL US ABOUT THE NAME.
In Greek, the word elia means olive tree, which is symbolic of peace, wisdom, strength, and abundance throughout the Mediterranean. In changing the spelling of the word a bit, we aimed to make it our own. It brings with it elegance and calm. When spoken, it feels graceful and airy, which complements the overall coastal Mediterranean vibe of the restaurant.

LAYA SERVES UP LEBANESE-STYLE CUISINE, AND LADYHAWK DISHES OUT MODERN EASTERN MEDITERRANEAN FARE. HOW WILL ILYA BE DIFFERENT?
Like siblings in a family, ILYA will bear a resemblance but have a very unique personality. It will focus on a coastal Mediterranean menu that is a reflection of my career to date, featuring Western Mediterranean flavors and highlighting fresh seafood. But diners will find some crossover from the other restaurants in the ILYA meze—hummus, muhammara, baba ganouj, Greek olives, and fresh-baked pita.

WHAT’S THE VIBE THAT YOU ENVISION?
From the menu to design, it incorporates the Cycladic style evocative of the Greek islands. It is fresh, with white and blues, incorporating nature. There is also a beautiful bar and a striking kitchen—visible to guests—with wood-fire cooking and fresh-baked bread.

DO YOU HAVE ANY OTHER CONCEPTS IN THE WORKS?
I am currently very focused on San Clemente but can let diners know that I have my sights set on presenting Lebanese cuisine in Las Vegas next year!

Whether you have one restaurant or 10, the key is to enjoy the moment. There are many challenges with bringing restaurants to life, but I excel in uncomfortable situations. They say success brings more success, so I am grateful for the opportunities in front of me and determined to make the most of each one.
