
Hilton Anaheim, Orange County’s largest hotel by room count, opened its new restaurant concept known as Poppy’s this month.
At the tail end of a $200 million renovation, the hotel replaced the previous Mix Restaurant & Lounge with Poppy’s as an all-day dining venue serving California-inspired cuisine. The new concept was developed by Hilton’s in-house food and beverage brand incubator called StiR Creative Collective.
“At Poppy’s, our inspiration is the colors and flavors of California: abundant seafood, fresh produce, and fragrant herbs, highlighting the mosaic of California’s spirit through food and showcasing the quality ingredients the region has to offer,” Executive Chef Prabeen Prathapan said in a statement.
“From the name, celebrating the wild history of California’s state flower, to the flavors found on the menu, it represents the future of Hilton Anaheim while reflecting the warmth & hospitality that we’ve shared with guests over the last 41 years,” General Manager Sergio Bocci added.
Updates to Hilton Anaheim’s food and beverage offerings, headed by chef Prathapan who joined Hilton in June, also include the hotel’s new Hansen’s Market and Saltflower Social Kitchen.
Hilton Anaheim has 1,574 rooms and over 150,000 square feet of indoor and outdoor meeting and event space. The hotel team aims to complete the renovation this fall.
